These coconut and cacao energy balls are the perfect healthy, delicious and energetic snack. They're quick and easy to prepare and can last up to a week in an airtight container.
They are delicious as is, or crumbled into some plant-based yogurt or into an açai bowl.
Caution: they are deeply addictive!
Ingredients for 20 energy balls:
70g desiccated coconut + extra for coating
10 pitted dates (possibly, Medjool dates)
140g almonds (alternatively: cashews)
2 tsp cacao powder
Optional: 1 Tbsp almond butter or other nut butter
Method:
1. Place the almonds and the desiccated coconut into a food processor and pulse until you get a sandy texture.
2. Add the cacao powder and the dates and pulse until a sticky paste forms (if it crumbles, just add more dates).
3. Scatter some extra desiccated coconut on a plate.
4. Use your hands (or an ice cream scoop) to form 20 balls and roll them in the desiccated coconut to form a coating. If the mixture happens to be too sticky and you have trouble creating the balls, having slightly wet hands might help.
5. Place the energy balls in the fridge for a couple of hours before enjoying.
Notes:
These energy balls can last up to a week if stored in an airtight container in the fridge.
It's also possible to freeze them. In that case, they will last up to a few months.
The coconut coating can be replaced by a cacao powder coating.
