We should eat legumes on a daily basis. My favourite kind, both for their taste and for the fact that they don't need to be soaked, are lentils. Lentils have more protein than most animal products and they're great sources of fiber as well.
Here's the recipe for my favourite lentil patties.
Ingredients for 2 people (4 patties):
250g cooked lentils
A handful of oats
50g walnuts
Olive oil
Tamari (soy sauce)
Method:
1. Preheat the oven at 180°C.
2. In a bowl, mix the cooked lentils, the chopped walnuts and splash of tamari with an immersion blender.
3. In a food processor, blend the oats until you get a flour-like texture (if you don't have a food processor, you can skip this step and mix them in as they are).
4. Add the oats to the bowl and keep blending with the immersion blender.
5. Leave for 5 minutes to thicken.
6. Use your hands to shape the mixture into four patties and place them on a baking tray. If the mixture is too crumbly, add a splash of water to make it thicker.
7. In a small bowl, mix a couple of tablespoons of olive oil and a couple of tablespoons of tamari.
8. Cover the patties with the olive oil/tamari mix, then flip them and cover the other side as well.
9. Cook for approximately 10 minutes on one side and 5-10 minutes on the other side, until they become golden brown.
10. Enjoy them straight out of the oven.
Notes:
These patties are delicious with some vegan mayo or mustard or with some mashed cauliflower and some baked potatoes.
