This week I want to share with you the recipe for some colourful and delicious beet and chickpea burgers. They're completely plant-based, gluten free and even people who don't like beetroots tend to like them!
Ingredients (for 4 people):
240g cooked beets
240g chickpeas (drained)
60g chickpea flour
Olive oil
A pinch of sea salt
Method:
1. Preheat the oven at 220°C.
2. Place the beets, the chickpeas and the chickpea flour and the salt in a food processor and pulse until you don't have any lumps.
3. Line a baking tray with parchment paper and brush it with olive oil.
4. With your hands, form 8 patties and place them on the baking tray.
5. Cook for 15 minutes. Then, flip them and cook them for another 15 minutes.
Notes:
These beet burgers are delicious with some cauliflower or pea mash, with avocado and rocket, or with roasted veggies.
